A Healthy Way to Get in Your Veggies
I like to cook a large bowl of brown rice, then when it's meal time I cook some chicken breast or fish and set it aside. I then saute the above ingredients with some coconut oil together. When it's all cooked and heated through I'll add the meat and rice and heat both through. It's healthy, colorful and very filling. For the larger appetite make it into a whole wheat burrito, or serve on a bed of lettuce/ romaine or any green.
